Obsessed with ceviche

After traveling to Peru, basically the ceviche capital of the world, I’m hooked. You just can’t find the good stuff here in the US. Perhaps it’s because Lima is located on the coast, I had the freshest tasting ceviche while staying in Lima.
Even better, I scheduled a cooking class while I was there to learn how they prepare it. So it’s your lucky day!
Chopped fresh white fish of your choosing
1/8 cup Fish stock
4 Fresh lime juice
Julienne red onion
Finely chopped red pepper (hot!)
Chopped cilantro
Salt to taste
1/2 celery stalk
2 garlic cloves
1/2 white onion chopped
1/4 tsp. ginger
1/4 chili pepper
1 tbs mayonnaise
Instructions:
Put the chopped fish in a large bowl. Add salt and stir vigorously. Add the chopped red pepper and cilantro and stir again. Add the secret sauce and mix in well. Now it’s time for the lime juice and fish stock to marinate or “cook” the fish as they say. Add the red onion and let it sit for 2 minutes. Get the plate ready garnishing with a sweet potato if you like, and corn. Then add the fish, topping it off with more cilantro and red onion. Voila!
